Bertello Bacon Pizza Sauce
Ingredients

1 (28-ounce) can whole peeled Italian-style tomatoes, such as San Marzano or Bianco DiNapoli

1/2 Vidalia onion, thickly sliced

1/2 pound smoked bacon
Instructions

Drain the canned tomatoes and place them in a bowl or saucepan.

Using an immersion blender or your hands, crush and puree the tomatoes until mostly smooth, leaving a little texture if desired.

Add the sliced onion and smoked bacon to the tomatoes.

Bring the sauce to a gentle simmer over medium-low heat.

Simmer for about 30 minutes, stirring occasionally, to allow the bacon and onion to flavor the sauce.

Remove and discard the bacon and onion.

Use the sauce right away on pizza and cook in the Bertello SimulFIRE Pizza Oven, or let it cool and store it in the refrigerator or freezer for later use.
Storage

Refrigerator: Store in an airtight container for up to 4 days.

Freezer: Freeze in small portions for up to 3 months.
