What surface can I use the pizza oven on?

You can use a wooden table, glass table, metal grated table, or plastic folding table. A solid sheet metal table will get hot due to being so heat-conductive. I've also used plastic folding tables many times.

Any table that has the same dimensions as the oven model you choose with allowance will work!

You can also put a heating pad down below the back of the oven to further protect the surface.

How Long Will Pizza Dough Last in the Freezer?

Our Bertello Pizza Dough will last up to one year in the freezer. Each dough ball has an expiration date marked on the bag.

How to Thaw Pizza Dough?

You can transfer the dough from the freezer to the refrigerator, and let it thaw overnight, then set it on the counter and get up to room temp for at least 4 hours before cooking. The warmer the dough is, the easier it will be to stretch.

You can also take it out of the freezer and let it thaw on the counter for about 6 hours before cooking.

For a quick thawing option, you can put the dough in a ziplock bag, then submerge in a warm bowl of water. Thawing it this way will take 30-60 minutes. You may need to empty the water in the bowl and replace with warm water again as the dough thaws and cools down the water.

How do you clean the pizza stone and oven?

You can remove the wood tray and dump the ashes. Do this at least one day after cooking, so you know the ashes have completely cooled down and will not start a fire.

You can clean the interior surface of the oven by using a damp rag. 

To clean the pizza stone:

Do you have the gas burner? If so, turn the burner on high and let it run for at least 30 minutes or so with the stone in the oven. This will burn everything off of the stone. After it cools down, you can rotate the stone 180 degrees, then repeat. 

If you don't use the gas burner method, you can use water and damp rag. You can also use a wire brush and a scraper. Do not use any soap or chemicals on the stone. It is very porous and will absorb this.

What kind of Wood should I use?

Generally, We do not recommend pellets, because they tend to cause a sooty black smoke. If only using wood to cook, I recommend using charcoal as a base layer to keep the wood burning, then add 100% Natural Oak Wood Kindling.

If using wood with the gas burner, I recommend preheating the oven with the gas burner on high for about 30 minutes, then turn to low and add 2 to 3 wood chunks for several minutes before cooking.

Where are the legs for my pizza oven?

The legs fold up underneath the oven. Please look underneath the oven if you do not see the legs, then simply unfold them.

Can the oven be used in the winter?

Yes, the oven works well year round, and can be used in sub-zero temps without any issues!

Do I need to Season the Pizza Oven?

Do an initial burn-off before cooking, for around 30 minutes.

What can I use so the dough doesn’t stick to the pizza peel and stone?

You want to flour your pizza peel with regular flour, semolina, or cornmeal. This will prevent the dough from sticking to your pizza peel. You also want to cover the dough with flour. Once you start assembling your pizza, make sure it doesn’t sit on the pizza peel longer than a few minutes, as it will begin to settle and stick to the peel. You also want to make sure your pizza stone is preheated to 700+ degrees F. Otherwise the dough will stick to the stone. General note: some pizza doughs are stickier than others. Even after following these tips, if your dough is still sticking, I would recommend trying a different pizza dough. Our Bertello Pizza Dough is a non-sticky pizza dough and very easy to work with.

What is the gas consumption for the gas burners?

The original Bertello Gas Burner uses 15,700 BTUs and the Bertello Grande Gas Burner uses 27,000 BTUs. A gas tank for the Bertello Grande typically lasts me about two months, when using the oven 4 days a week for about an hour each time.
