Pizza Dough - Vito's Recipe

Simple Pizza Sauce

28 ounce can Bianco DiNapoli Tomatoes
Fine Sea Salt
Good Olive Oil

Instructions: Drain the juice from the canned tomatoes and discard the juice. Place the tomatoes in a bowl. Add a tablespoon of salt (or salt to taste). Add three tablespoons of olive oil. Use an immersion blender to puree the tomatoes. 

Note: Bianco DiNapoli Canned Tomatoes (personal favorite) or any good canned San Marzano whole peeled tomatoes will work.

Spicy Salami Emilia

Note: Rip fresh basil leaves into smaller pieces, then place on top of pizza sauce. Put pieces of fresh mozzarella over the basil leaves so they don't burn during cooking

Pizza Prosciutto

Parmesan Cheese, mozzarella cheese, prosciutto di parma, baby arugula, fresh lemon juice, drizzle of olive oil. Squeeze lemon after pizza is finished cooking. 

Pizza Arugula

Parmesan Cheese, mozzarella cheese, olive oil, baby arugula, fresh lemon juice. Squeeze lemon juice onto pizza after pizza is finished cooking

Smokey Bacon Pizza

Tomato sauce, smoked bacon, mozzarella, pecorino romano, black pepper

Bertello Carne

Tomato sauce, Parmesan Cheese, mozzarella cheese, Canadian bacon, sweet Italian fennel sausage, fresh basil

Bertello Prosciutto

Tomato sauce, mozzarella cheese, Pecorino Romano, prosciutto di parma, olive oil, fresh basil

Tomato sauce, Canadian bacon, mozzarella, Parmigiano Reggiano, pineapple

Pesto Ricotta Pizza

Homemade pesto: 1 bunch of basil, 1/2 cup of (almonds, pecans or walnuts), 2 cloves of garlic, 1/2 cup olive oil, 1/2 cup parmesan cheese (freshly grated),
Ricotta cheese: Topped with a four blend of cheese (parmesan, asiago, fontina and provolone)

Pala Pizza's Cranberry Goat Cheese & Caramelized Onion Pizza

Tomato sauce (light), cranberry goat cheese (substitute: plain goat cheese + dried cranberries), caramelized onion (half onion cooked down in 2 tbsp butter, 30 min), arugula, lemon zest, balsamic vinegar to drizzle.
